Cake: mix the igredients below & put into a 9×11 pan
1 3/4 c. sugar
4 eggs
1 1/3 c. cooking oil (when doubled use 1 c. applesauce)
2 tsp. baking soda
2 c. flour
2 tsp. baking powder
2 tsp. cinnamon
4 c. finely grated carrots
3/4 c. nuts (optional — I opt out)
Frosting:
1 LB powdered sugar
8 oz. cream cheese
1/2 c. margarine
1 tsp. vanilla
Bake @ 350 for 40 minutes. Frost after it has cooled
